There’s nothing better than waking up to the smell of Mexican breakfast cooking. Warm eggs, hot coffee, fresh tortillas, black beans, sweet fruit, and some yummy, spicy salsa.

You don’t think salsa and beans are breakfast foods? I assure you they are, and very healthy ones too!

A healthy and energizing Mexican breakfast has protein (eggs and beans), fiber (beans and fruit), healthy carbs (corn tortillas), and a good dose of vitamins (salsa). And coffee. Every breakfast should have coffee.

This time, we’re going to make this breakfast even healthier by adding veggies to it. You can be sure this meal will keep you energized through a long, busy morning.

Healthy Mexican Power Breakfast

First, you’re going to need half a cup of diced, cooked green beans.

What do you mean you’ve never had green beans for breakfast? They’re delicious!

I usually do some meal prep and always have diced, cooked green beans stored in my fridge for the week. Why? To make breakfast, of course!

Now, we’re going to saute the green beans with diced onion a dash of salt.

When the onion is transparent, add two beaten eggs. This will make two servings.

Cook the eggs over medium heat until they’re done. Easy, isn’t it?

Finally, serve the eggs with some Mexican black beans on the side, and add a tablespoon of nice, hot salsa.

Warm a couple of corn tortillas and serve them on the side. Mexicans like to spoon their eggs and beans with tortillas or make some quick tacos with them.

I like to have some diced papaya for breakfast instead of a glass of orange juice, but you can have whatever you like best. Just make sure you also include fruit.

Finish everything with a cup of hot coffee. In case you didn’t know, Mexico produces world-class coffee, mostly from the provinces of Veracruz, Chiapas, and Guerrero. But in case you want to take the healthier road, you can have a cup of green tea.

But most importantly, you must sit down and take your time to have breakfast. In Mexico, families like to sit down together to at least one meal.

How often do you actually sit down to eat with the family without looking at your cell phone or the TV? That’s what I’m talking about.

Let’s make it our goal to sit down and enjoy a healthy, power breakfast at least a couple of times a week. What do you say?

  1. This is the type of food preparation I would LOVE to see the WORLD participate in. A bagel, cream cheese and coffee does not a breakfast make!! Your recommendation offers an excellent balance as well as providing taste that so many people are searching for. I would add cooking the eggs in coconut or avocado oil (in place of olive oil since these other oils have higher smoke points) and adding some avocado itself to the mix would add that healthy fat component (on top of the egg yolks.)
