So, you may read this recipe and think I have completely lost my mind. Mayonaisse and jalepenos in a corn salad? Yes, this was delicious. My kids gave me the cross-eyed look when I served it to them but once they tried it they were shocked at how much they really liked it. It also pairs perfectly with the empanadas that we made the other night.

Verdict:

The salty taste of the cheese with creaminess of the mayonaisse was delicious. The jalepenos added a bit of heat. Taste the salad as you go to make sure you like the amount of spices and spiciness. Leave the membrane in the pepper if you want it spicier or add more chili powder or a dash of cayene pepper.

If you do not have Cojita cheese you can substitute grated Parmesan cheese or a small amount of crumbled feta cheese. The salty taste…

One of the reasons many domestic travelers visit the Huastec Region of Mexico is to enjoy the delicious ethnic dish called zacahuil.

Zacahuil translates as bocado grande, Spanish for big bite.  The word derives from one of the many Maya dialects specifically the Huastec or Téenek.

When I traveled to Xilitla, one of my beloved towns in Mexico, I had the opportunity to eat this succulent dish for the first time.  It is delicious to say the least; smoky in flavor and the meat in the dish provides enough protein needed to start a new day full of activities or just to start a regular workday.

The livelihood of many families in Xilitla depends upon this dish as it provides the means to generate income and support their families.

How much are we traveling this summer? Every single weekend, except for two,  from the beginning of June to the middle of September. The cat is even done with us being gone as you can see above. She sees the suitcases come out and she tries to climb in. We are not supposed to forget to take her with us again!

Because we are traveling so much I am not buying groceries as I normally do. I am using up every little scrap I can find in the pantry, refrigerator, and freezer to save money. My children and I were going through the freezer the other night and found some ground beef and a couple of boxes of pierogi. I knew we had some salsa in the pantry and cheddar cheese in the fridge.
